Strawberry Shortcake Rice Krispy Treats

Ingredients:

For the Treats:

  • 6 cups Rice Krispies cereal

  • 4 tbsp unsalted butter

  • 1 (10 oz) bag mini marshmallows

  • 1 cup freeze-dried strawberries, crushed

  • 1/2 tsp vanilla extract

For the Topping:

  • 1/2 cup white chocolate chips, melted

  • 1/2 cup Golden Oreo crumbs (about 6–8 cookies, crushed)

  • 1/4 cup freeze-dried strawberries, crushed

Instructions:

Step 1: Prep the Pan
Line an 8x8" or 9x9" baking pan with parchment paper and lightly grease.

Step 2: Make the Base
In a large pot over medium heat, melt the butter. Stir in the marshmallows and mix until smooth. Remove from heat and add vanilla extract and crushed freeze-dried strawberries.

Step 3: Combine with Cereal
Immediately stir in the Rice Krispies until fully coated.

Step 4: Press and Cool
Press the mixture into your prepared pan using a greased spatula. Let set for 10–15 minutes.

Step 5: Add the Topping
Drizzle melted white chocolate on top. Sprinkle with Golden Oreo crumbs and more crushed strawberries.

Step 6: Chill and Cut
Chill for 20 minutes to firm up, then cut into squares and enjoy!

Tips:

  • Swap white chocolate for strawberry-flavored candy melts for a color pop.

  • Add a touch of lemon zest to the base for extra brightness.
