Marinated Tilapia with Mango Salsa

Ingredients
For the Tilapia Marinade:
4 tilapia fillets
3 tbsp olive oil
Juice of 2 limes
2 garlic cloves, minced
1 tsp ground cumin
1/2 tsp paprika
Salt and pepper to taste
For the Mango Salsa:
1 ripe mango, diced
1/2 red bell pepper, finely chopped
1/4 red onion, finely diced
1/2 jalapeño, seeded and minced (optional)
Juice of 1 lime
2 tbsp chopped fresh cilantro
Salt to taste
Instructions
Marinate the Tilapia:
In a bowl or zip-top bag, combine olive oil, lime juice, garlic, cumin, paprika, salt, and pepper.
Add tilapia fillets, coat well, and let marinate in the refrigerator for 20–30 minutes.
Make the Mango Salsa:
In a bowl, combine mango, red bell pepper, red onion, jalapeño, lime juice, cilantro, and a pinch of salt.
Toss well and refrigerate until ready to serve.
Cook the Tilapia:
Heat a non-stick skillet or grill pan over medium heat.
Cook tilapia 3–4 minutes per side or until it flakes easily with a fork.
Serve:
Plate the tilapia and generously spoon mango salsa on top.
Serve with rice, quinoa, or fresh greens.
