Ingredients

For the Tilapia Marinade:

  • 4 tilapia fillets

  • 3 tbsp olive oil

  • Juice of 2 limes

  • 2 garlic cloves, minced

  • 1 tsp ground cumin

  • 1/2 tsp paprika

  • Salt and pepper to taste

For the Mango Salsa:

  • 1 ripe mango, diced

  • 1/2 red bell pepper, finely chopped

  • 1/4 red onion, finely diced

  • 1/2 jalapeño, seeded and minced (optional)

  • Juice of 1 lime

  • 2 tbsp chopped fresh cilantro

  • Salt to taste

Instructions

  1. Marinate the Tilapia:

    • In a bowl or zip-top bag, combine olive oil, lime juice, garlic, cumin, paprika, salt, and pepper.

    • Add tilapia fillets, coat well, and let marinate in the refrigerator for 20–30 minutes.

  2. Make the Mango Salsa:

    • In a bowl, combine mango, red bell pepper, red onion, jalapeño, lime juice, cilantro, and a pinch of salt.

    • Toss well and refrigerate until ready to serve.

  3. Cook the Tilapia:

    • Heat a non-stick skillet or grill pan over medium heat.

    • Cook tilapia 3–4 minutes per side or until it flakes easily with a fork.

  4. Serve:

    • Plate the tilapia and generously spoon mango salsa on top.

    • Serve with rice, quinoa, or fresh greens.
