Coconut Maple Overnight Oats with a Twist

Creamy, cool, and naturally sweet — with a tropical surprise that makes breakfast anything but boring.

Ingredients (1–2 servings):

  • 1/2 cup rolled oats

  • 1/2 cup unsweetened coconut milk (or almond milk)

  • 1/4 cup Greek yogurt (for extra creaminess)

  • 1 tbsp chia seeds

  • 1 tbsp maple syrup

  • 1/4 tsp vanilla extract

  • 1 tbsp toasted shredded coconut (for topping)

  • The twist: 1 tbsp finely chopped dried pineapple or mango

  • Optional: a pinch of sea salt for balance

Instructions:

  1. In a jar or container, mix oats, milk, Greek yogurt, chia seeds, maple syrup, vanilla, and your dried fruit twist.

  2. Stir well, seal, and refrigerate overnight (or at least 4 hours).

  3. In the morning, give it a stir. Top with toasted coconut and extra maple or fruit if desired.
